Vegan banana chocolate chip pancakes

It’s no secret I eat a lot of pancakes. Both in restaurants and cafés, as well as making them at home.
When the pandemic first hit, and we all found ourselves with a lot of extra time on our hands, I took to making rather extravagant working from home brunches. This included refining my pancake game and testing out some new variants.
As an avid banana bread lover, I’ve often got some overripe bananas laying about, so I decided to see if I could use these up in different ways. Plus, I don’t need to remind you of the time when eggs were suddenly very difficult to come by in the supermarkets!
When it comes to vegan baking and sweet recipes, banana can be a great substitute for the texture of egg. So voila, here are my vegan pancakes in recipe form!
Vegan pancakes – banana and chocolate chip
Makes approx. 4 pancakes
Ingredients
- 140g plain flour
- 130ml alt. milk (I use almond)
- 1 overripe banana
- 2 tbsp oil
- 2 tbsp caster sugar
- 1 tsp salt
- 1 tsp baking powder
- Dark chocolate chips
